Salsa

20 c. tomaotes-peeled and mashed
2 c. chopped green pepper
1 c. vinegar
2 c. chopped onion (white or yellow)
5 Tbsp. salt
2 stalks celery chopped
1Tbsp chili powder
7 shakes of red pepper
1 Tbsp black pepper
5 Tbsp. sugar
6 cloves of garlic (1 ball)
Simmer 45 min.
Add a concoction of cornstarch and water
2 c. water
3/4 c. cornstarch
As it's simmering gradually add- usually I'll check as I'm adding
Cook another 5 min
Hot water bath 20 min.
