Pea Soup

1 Ham bone or pork hock
3-4 potatoes, peeled and chopped
1 pt carrots, peeled and chopped
stalk of celery, chopped
3/4 bag dried peas
water
salt and pepper
Place bone in a large cooking pot. Add vegetables and water. Cook 2-3 hours on low heat.

Rainbow Jello Salad

One package each of the following flavors of jello Black cherry, cherry#, strawberry, peach #, orange, lime#, lemmon.
For the # layers of jello mix 1/2 c. carnation milk and 1 c. hot water to a package of jello.
For the other layers mix 1 1/2 c. water (part boiling and part cold per package of jello.) Layer the jello mixtures in the bottom of a 9 by 13 inch pan starting with the black cherry layer. Put pan in freezer to set jello while you make the next layer. Top the salad with cool whip.

Red Hot Applesauce Salad

1/3 c. read hots
1 c. boiling water
1 3 oz. pkg. cherry jello
2 c. unsweetened applesauce

Dissolve red hots in boiling water (heat in microwave as needed to dissolve-stirring inbetween). Dissolve cherry jello in water/red hot mixture; add the applesauce and stir until blended; chill until firm.

Oven baked strogenoff

2 lb. chuck of round steak
1 can cream of mushroom soup
1 pkg. onion soup mix
1 c. water
2-3 Tbsp. sour cream

Cut meat in serving pieces or cubes and put into casserole. Combine soups and water, pour over meat. Put a tight cover on this casserole because it requires a long slow cooking in a 350 degree oven for 2 hours. When meat is very tender, remove to warm platter and stir in sour cream into remaining juices and pour over meat. Ready to serve.

Chicken Breast Apricot

Deboned chicken breasts
Place on greased baking sheet

Mix together
1/2 c. apricot jam
1/2 c. Russian dressing
1 pkg. dry onion soup

spread on chicken
Bake 350 degrees 1 hour

Barbeque

1 lbs. hamburger (browned)
1 onion chopped fine
1 c. finally chopped celery
2 Tbsp. brown sugar
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. mustard
1 can tomato soup
Combine and cook slowly for one hour. Spread hot between buns.

Scrabble

2 lb. mixed salted nuts
1 12 oz. pkg spoon size shredded wheat squares
1 (10 1/2 oz) pkg. doughnut shaped oat cereal
1 (6 oz) box bite size crisp rice squares
1 (7oz) pkg. small pretzel sticks
1 (4 1/2 oz) can pretzel bits
2 c. salad oil
2 Tbsp Worcestershire sauce
1 Tbsp garlic salt
1 Tbsp seasoned salt
Mix ingredients in a very large roaster or large pans. Bake at 250 degrees for 2 hours
stirring and turning mixture with wooden spoon every 15 min. Makes 9 qts

Raspberry Poke Cake

1 pkg. white cake mix
1 pkg. (3 oz) Jello Raspberry Jello (or any other flavor)
1 c. boiling water plus 1/2 c. cold water
Prepare cake as directed on package, baking in a well greased and floured 9x13 pan at 350 degrees for 30-35 min. Cool in pan 15 min then poke with fork at 1/2 inch intervals. Dissolve gelatin in boiling water. Add cold water and spooon over cake in pan. Chill 3-4 hours. Top with cool whip topping.

Raisin Bread (2 loaves)

1 pkg yeast
1 c. luke warm water
1 c. lukewarm milk
2 tsp. salt
6 tsp. sugar
4-6 Tbsp. Crisco
6 C. flour
1 1/2 c. raisins
Pour yeast into water with 1/2 tsp. sugar,
Let stand till it fills up cup, then put into scalding milk (which has been cooled to lukewarm) with all the other ingredients except the flour. Stir, then add 2 c. flour, beat until smooth, work in rest of the flour to make a bread dough. Knead. Let rise to double then knead and form 2 loaves. Place in greased pans- Let rise Bake at 350 degrees 30-45 min.

Lemon Bars

1 white cake mix
1 can lemon pudding pie mix
4 eggs
beat until mixed

Bake in a greased jelly roll pan.
30 min at 350 degrees

Meat loaf

1 1/2 lb. ground beef
3/4 c. Oats (uncooked)
2 eggs, beaten
1/4 c. chopped onion (onion flakes)
2 tsp. salt
1/4 tsp. pepper
1 c. tomato juice

Combine all ingredients thoroughly and pack firmly into loaf pan. Bake in 350 degree oven for 1 hour. Put catsup over top.
Let stand 5 min. before slicing.

Pineapple Upside-down cake

Melt 1/2 c. butter in 9 inch pan. Stir in 1/2 c. brown sugar and 2 Tbsp. syrup from a can of pineapple slices. Arrange drained slices in sugar mixture. Pour cake batter over all (use jiffy mix or only 1/2 cake mix) Bake in preheated 350 degree oven 45 min. Cool 5 min. Serve

Children’s Hospital

Service Learning Project





“Do not go where the path may lead, go instead where there is no path and leave a trail” Ralph Waldo Emerson. In my Gen 300 class we were asked to either write a book report or to do a service learning project. I wanted to try a path I have never taken before, but have longed for ever since High School. I have felt compelled to work in a Children’s Hospital. The reason being, my Aunt spent many months in the Children’s Hospital due to Polio. I was too young to remember my aunt, but when she passed away she left many fond memories within my family. It is these fond memories drive me to want to work with children who are very ill. Many of the memories contain my aunt teaching family members. My aunt learned from the hospital and was able to teach others. I want the children, today to have the same opportunities to learn just like other children receive. I can learn a lot from these children and they can learn from me, together we can travel down the unknown path of knowledge.

My very first day at the Children’s Hospital I received the full tour of the facilities. The woman who introduced me to the Hospital was Kali Gerlich. Kali helps plan activities for the children. Also, she taught me that the Hospital is both a medical facility as well as a school facility. The mission is to help every child develop and heal both mentally and physically. The Hospital is divided into four wards and treat’s patients from infants up to the age of fifteen.

The first ward is for children who are physically disabled and who just had surgery. The second ward is children with behavioral problems. The third ward is children with minor behavior problems and physical disabilities. Last but not least is the physically impaired/autistic ward.

One thing that still sticks out in my mind is being introduced to a young autistic child. I was told this child very rarely verbalizes. The lady knelt down next to the boy and told him my name. The boy said my name out loud. Both the lady and I were shocked and pleased with his response. These types of achievements are what we strive for in the Hospital.

As we walked around the facilities Kali lead me into a stimulation room. Lights in the room can be dimmed and there is a fiber optic wall within the room to help calm down the patients. Also, there is a swing in the middle of the room for autistic children to help relax the children. Finally, there contains many various musical equipment, which are spread throughout the room. Music helps autistic children; there are still many studies out as to why. Supposedly, the children like the consistent beat and the vibrations that music produces.

My second, third, and fourth trip I spent working in the various wards with several children. Each time I went to the Hospital I learned more and more about the Children and about the Hospital. I learned more about the children and their needs. I learned where various toys and manipulative are throughout the building.

One child I worked with is physically impaired and verbally impaired. This student verbalizes with her eyes. When she looks up this means “yes” and when she looks down this means “no”. I held up the videos and she told with her eyes what video she wanted to watch. She kept telling me “no”. Finally, she agreed to watch a Mickey Mouse video.

Also, we worked on self-esteem. I opened a beauty parlor and I did her nails. She thinks she is ugly due to her physical impairments. However, I am teaching her that the beauty within is far greater than physical beauty.

Another child I worked with is physically seven years old, but is mentally an infant. Also, she is partially blind so she feels people’s faces to in order to get to know people. She loved getting hugs and she spent most of the time petting my hair and face. It truly tore me to have to leave, because when I left she started screaming. The nurses had to go in and calm her down.

Another child I worked with, we worked on manners and patience. This young man often becomes very angry and irritated with people. This young man is paralyzed and struggles with being paralyzed. One way we worked on patience was I controlled the Nintendo and he told me where to move and what keys to press. On another day this same young man was very upset with his nurse. He has a poor gag reflex due to his paralysis and when the nurse brushes his teeth it hurts. I stayed with him and helped calm him down. I think he was still mad at his nurse, but I informed him he is in very good hands at the Hospital.

On Friday (4/18/2008) was “Arms around Autism” day. This is a National day to help support autistic people. Over half of our patients in the hospital are autistic. The goal for this day is to show support for autistic people. There were a lot of supporters, since autism is a growing disease.

All the volunteers and workers stood around the whole school and linked arms to show the children with autism that we support them. It was such a motivating day for: the volunteers, workers, and children. The children appreciated the support even though they cannot show it.

After Friday, I feel even more motivated to work on my experiment to see if we can use beat/vibrations to help communicate with the autistic children. There are different rates of vibrations and if we can use a code to make an alphabet, we might be able to communicate feelings to autistic people.

I spent about 12 hours working in the Hospital and I loved every minute of it. I will continue volunteering at the Hospital. This has been the most rewarding experience. I plan on becoming a Child Life Specialist when I graduate. A Child Life Specialist teaches the children and instructs them about their illness.

These children long for people to come and spend time with them. They want to be loved and cared for just like everyone wants to be loved and cared for. Most of the children at the Hospital are wards of the state. These children have no family to come and spend time with them. I have spent hours encouraging other people to start volunteering at the Hospital. Also, I encourage people to journey down this new path to help leave a trail for these children.

This path that God lead me down has allowed me to leave a trail with these children. The trail I left is a trail of love. I feel God is leading me to share my experience with others, to show others a different point of view. What people need to realize we cannot take the pain away for these children! You cannot make them walk or see, but you can show them that you care by being there for them. Be the child’s hands or eyes. People do the hands and eye sight for the children and God will do the rest.



Food for thought-Easter presentation


As I walk through photos of the world both past and present; images come to mind of what once was.  A woman cradling her child; both frail and weak from lack of food and sanitary conditions, an abandoned child, and a picture of shattered pillars scattered on the ground. At first glance the photos can bring an emotion of: sadness, anger, and despair. Yet in this same image are signs of a promise that brings so much more. We just have to look close enough. Not only open our eyes, but also our hearts.

Among the woman holding her child is a single candle lighting the darkness. Isaiah 61:1 shares an imagery of the light, “The Spirit of the Sovereign Lord is on me, because the Lord has anointed me to proclaim good news to the poor. He has sent me to bind up the brokenhearted, to proclaim freedom for the captives and release from darkness for the prisoners”. The light shed is that of the word of God proclaimed to those who do not know of him.

Off in the distance behind the abandoned child is a tree. With each passing season the tree sheds and grows a new leaf, which is what God wants for his child; to start a new leaf on life. Isaiah 61: 2-3 shows the newness “To proclaim the year of the Lord’s favor and the day of vengeance of our God, to comfort all who mourn, and provide for those who grieve in Zion- to bestow on them a crown of beauty instead of ashes, the oil of joy instead of mourning, and a garment of praise instead of a spirit of despair. They will be called oaks of righteousness, a planting of the Lord for the display of his splendor”.

Among the shattered pillars and ruins is a rainbow. Just as after the great flood God sent a promise of a rainbow. The rainbow among the ruins is a promise of restoration that will take place in Jesus second coming. Indicated in Isaiah 61:4, “They will rebuild the ancient ruins and restore the places long devastated; they will renew the ruined cities that have been devastated for generations”.



As I continued scavenging through the photo’s I found a scroll with a story embracing all of what Isaiah was describing.

            All of Nazareth was buzzing. Jesus, Joseph’s son, was coming home. Many say he is a prophet of some sort. Perhaps, dare we say it, maybe he’ll help up get rid of these cursed Romans! If we could only get rid of these cursed Romans, then things can go back to the glory days of King David. Wouldn’t that be something? That’s what we need, another King David. Isn’t that right? That’s what we need, right, the promised Messiah?

Look! He’s coming into Nazareth! Quick, let’s get inside the synagogue. He always goes to the synagogue, especially on the Sabbath. The place is packed! It’s a good thing we came early! Wow! They’re having him read! I wonder what he’ll read? Probably some message about the Messiah and how He will get rid of these cursed Romans, them and their cursed taxes. It sounds like he has picked Isaiah. Hush! Listen! “The Spirit of the Lord is on me, because he has anointed me to preach good news to the poor. He has sent me to proclaim freedom for the prisoners and recovery of sight for the blind, to release the oppressed, to proclaim the year of the Lord’s favor.” Look he stopped! He didn’t finish! He’s rolling the scroll back up! He’s giving it back to the attendant! Wait! He’s going to speak! What is he saying? “Today this scripture is fulfilled in your hearing.” But he didn’t read the whole message! He left out the part “and the day of vengeance of our God”!

Silly people weren’t they? They were a strange lot! They actually thought that Jesus was going to free them from the Romans! Didn’t they realize what He came to do? I can tell if Jesus came today to South Dakota to this very place HE could do some real good. Maybe He would get these gasoline prices rolled back! That’s what we need! Right? Isn’t that right?



I replaced the scroll and the photos back in the box. I myself, was feeling restored.  I opened my Bible and read Isaiah 61: 1-4, 9-11.

He has sent me to bind up the brokenhearted, to proclaim freedom for the captives and release from darkness for the prisoners, to proclaim the year of the Lord’s favor and the day of vengeance of our God, to comfort all who mourn, and provide for those who grieve in Zion- to bestow on them a crown of beauty instead of ashes, the oil of gladness instead of mourning, and a garment of praise instead of a spirit of despair. They will be called oaks of righteousness, and planting of the Lord for the display of his splendor. They will rebuild the ancient ruins and restore the places long devastated; they will renew the ruined cities that have been devastated for generations.

Their descendents will be known among the peoples. All who see them will acknowledge that they are a people the Lord has blessed. I delight greatly in the Lord; my soul rejoices in my God. For he has clothed me with garments of salvation and arrayed me in a robe of righteousness, as a bridegroom adorns his head like a priest, and as a bride adorns herself with her jewels. For as the soil makes the sprout come up and a garden causes seeds to grow, so the Sovereign Lord will make righteousness and praise spring up before all nations.”

This Easter season; we need to take the promise of restoration that is hidden among us and disciple this promise to those who do not know.  So go out and plant the seeds.

Kuchen (German)

4 c. flour (or more to make it a rolling crust)
1 level tsp. baking powder
1 c. cream
1 c. milk
1 egg
1/2 tsp. salt
1/2 tsp vanilla
1/2 c. sugar
The above ingredients are for the crust.

Topping: 1 c. cream
2 Tbsp. flour
1/4 c. sugar
2 eggs

Slice apples and sprinkle with cinnamon and sugar.

Bake in a 400 degree oven

Peanut Butter Pizza Bars

1/2 c. sugar
1/2 c. brown sugar
1/2 c. butter
1/2 c. peanut butter
1 egg
1 tsp. vanilla
Blend well and add 1 1/2 c. flour. Press dough into a 9x13 inch pan and bake at 375 degrees for 10 min.
Add 2 c. miniature marshmallows
1 (6 oz) pkg. choc. chips
Sprinkle marshmallows and chocolate chips over top. Bake 5 to 8 minutes more until lightly browned.

Food for thought- Easter Egg Hunt

Every spring my family would prepare for Easter. This was a very special time of year. As a family we would gather together our traditional Easter things on Friday and pack our bags. Then we would head for North Dakota. Visiting grandpa and grandma was always fun. On Saturday we would dye eggs and make preparations for Easter dinner.

On Sunday morning we attended church. We all sat like little angels, because we knew the Easter egg hunt was after dinner. If we didn't behave there would be no Easter egg hunt, at least that's what we were told. After church all my cousins and I would help out by staying in the living room, talking and playing games. When the call for dinner came, we would run into the dining room and grab our seats at the kids table. Every youngster had to sit by the little kids table until they got older as there wasn't room for everyone around the adult table. The food was delicious. It always is when it's home cooked by grandma. After finishing eating, the kids would have to wait and play games till the grown-ups got the dining room cleaned up and all the dishes washed. One grown-up, usually my mother, would go outside and hide plastic eggs with candy in them.

Finally, they would let all of us kids run out and start searching. They usually had the big kids out back and the youngest ones up front. Of course, being the youngest cousin, I was always up front. After everyone found their eggs, we would take our treasures, go find a spot and eat our candy. Gum drops and chocolate eggs would fill our tummies and a smile would spread over our faces.

The rest of the afternoon was for fun and leisure. Sometimes we stayed up till late that night playing games. The next day we would head back home with stories of how much fun we had.

Better than anything cake

1 German Choc. cake mix
Mix as per box directions
Take from oven take fork and punch holes over all. Pour Eagle Brand milk over warm cake. Let stand overnight adn then refrigerate. Cover with regular size cool whip. Grate an 8 oz. hershey bar and chop 2 heath bars and sprinkle on cake. Keep refrigerated until you use.

Cheese Bake Hotdish

2 c. uncooked macaroni
2 Tbsp. flour
1 tsp. salt
1 c. grated processed cheese ( I use velveeta cubed)
1/2 c. butter
1 1/2 c. milk
1/4 tsp pepper
paprika
Prepare macaroni according to general directions on package. Drain. Melt butter. Add flour and cook, stirring constantly in saucepan for two min. Do not brown. Stir in milk, salt and pepper. Cook till smooth and thickened. Combine macaroni with white sauce. Pour into 11x7 inch casserole. Top with cheese. Sprinkle with paprika. Bake in 350 degree oven for 25-30 min. Place under broiler for a few min. if a browner crust is desired. Watch carefully.

Pizza Rolls

12 oz. mozerella cheese
1 pt. jar ragu spaghetti sauce
1 lb. hamburger
1/3 c. sliced olives (optional)
3/4 tsp. salt
1/4 tsp. garlic salt
sliced onion (optional) flakes work too
1/2 tsp. oregano
Fry hamburger and onion. Add other ingredients
stir until cheese is melted. Place mixture on sandwich buns. Wrap in foil and put in freezer.
Bake at 425 degrees for 25-30 min if frozen
Bake at 425 degrees for 15-20 min if unfrozen

Penny Supper

12 weiners, thinly sliced
8 medium potatoes, cooked and diced
2 cans peas
2 cans cream of mushroom soup
2 Tbsp. onion
1/2 c. soft butter
2 tsp. mustard
salt and pepper
Divide weiners so you will have a few on reserve. Combine weiner slices with potatoes, onions, and butter in baking dish. Combine remaining ingredients and toss with weiner mixture. Dot with reserved weiner pennies. Cover tightly and bake in moderate oven (350 degrees) for 25-30 min. Uncover and garnish with toasted triangles. Makes 8 servings.

Salsa

20 c. tomaotes-peeled and mashed
2 c. chopped green pepper
1 c. vinegar
2 c. chopped onion (white or yellow)
5 Tbsp. salt
2 stalks celery chopped
1Tbsp chili powder
7 shakes of red pepper
1 Tbsp black pepper
5 Tbsp. sugar
6 cloves of garlic (1 ball)
Simmer 45 min.
Add a concoction of cornstarch and water
2 c. water
3/4 c. cornstarch
As it's simmering gradually add- usually I'll check as I'm adding
Cook another 5 min
Hot water bath 20 min.

Food for thought-Leaves of Life

Life is like a tree. We are a combination of roots, trunk, and branches. The green leaves represent the present and future; and the fallen leaves represent the past. When time passes, the leaves fall, because their journey in life is past. The green leaves stay on the tree, because they are what's to come and what we are doing in the present time. New leaves continue to form as life continues on a daily basis.

This whole process starts when the tree is a "baby" and it gets its first shoots in its root system. People's roots begin when they are born, begin to grow, learn to crawl and walk. The tree grows and grows until it reaches its peak in height growth. We grow and grow until we reach our peak growth, which happens during our teenage years. Summer follows as we enjoy those years of warmth, friendship, jobs, children, etc. Fall in this simile doesn't end life, but life slows us down as it happens over a period of time. Winter is the representation when the tree dies, just as winter symbolizes death.

Sometimes trees colors change (some trees are more colorful than others with the array of colors). Some people's lives are more colorful than others depending on choices and decisions that they make throughout the years. Another interesting approach is the simile of looking at the middle of the tree. It has continuous lines over and over in a spiral rotation. Our spirals are perhaps our fingerprints. They are our uniqueness just as they are for the tree.

Trees get diseases or are cut down for other uses. Cutting down a tree is like an untimely death during life. Accidents and health are the main factors for early deaths. We need to preserve or lives just as we preserve our trees. A full life of all the seasons is what is meant for all to enjoy.

Knepfla Soup

Dough : 2 eggs
1/3 to 1/2 c milk
1 tsp. salt
2 c. flour or enough to make a stiff dough. Mix and knead dough by hand, form into a ball and roll flat 1/4 inch thick. Let stand. Roll pieces of dough between hands to form snake like strips. Cut into little snips of dough with scissors. Drop into boiling water to which a little salt has been added. The Knepfla will float to the top when done. Drain and add butter to them so they won't stick. In another kettle, combine 4 qts. water, to this add a little salt and 6 potatoes cubed. After potatoes are soft add Knepfla. Turn heat down then add 2 cups sweet cream, 2 Tbsp. chiken base, 2 Tbsp. butter, 1 tsp. parsley flakes, 3 bay leaves, 4 whole all spice, and 4 whole cloves. ( I usually just add a shake or two of ground all spice and cloves) chopped onion may also be added. Simmer to blend. Serve.

Chicken Enchiladas

Have ready 18-22 flour tortillas
Filling 1 3pound chicken, cooked and boned
1 onion
salt and pepper
1/2-1c. chopped celery
2 sm cans chopped green mild chili's

Saute onion and celery in 1/2-1 stick marg. When tender, remove from stove and add to chicken, chilis, salt and pepper. Spread in tortillas. Roll and place seam down in pan close together. Grease pan first. Mix topping and pour over enchiladas.
Topping: 1 c. sour cream 2 cans cream of chicken soup
Sprinkle 1 pound grated Montery Jack cheese over all.
Bake at 350 degree's for 30 min.
You can freeze these and then thaw and bake later. This makes 2 large glass cake pans full and sometimes another little one.

Rhubarb Dessert

2 c. flour
1 c. butter
2 Tbsp. sugar

Mix like pie dough
Press in large cake pan and bake 10 min at 325 degrees.
Take out and put on the following topping:
6 egg yolks
2 c. sugar
1 grated orange rind (optional)
5 Tbsp. flour
5 c. chopped rhubarb
Bake 50 min or longer at 325 degree's
Take from oven and top with:
6 egg whites beaten stiff
A little salt
12 Tbsp. sugar
1/2 tsp. vanilla
Bake 15 min. at 350 degree's

Pistachio Dessert

42 Ritz Crackers
1/2 c. Milk
1 Stick butter or Marg. melted
1 Qt. Ice Cream
2 pkg pistachio instant pudding

Put crackers and melted butter into a 9 X 12 inch pan and bake for 10 min at 350 degrees; cool. Mix together with rotary beater the pudding and milk, then blend in ice cream.
Pour into cooled crust; freeze.
Top with : 1 large cool whip and 2 crushed Heath candy bars.

Punset (Filipino Dish)

Prep: Cook Asian noodles until done
Cut up pork Chop and brown in oil and butter. (brown until cooked all the way through)
Add Onion, garlic, soy sauce. Simmer for 10 min and then add Coleslaw and chicken broth (cook until coleslaw is tender). Add in noodles and cook for 10 min.

You can add in baby corn and snow peas to the recipe! Also, you can serve the dish over white rice.


Dessert: Fortune cookies

Stamppot (serves 4) Dutch Dish

Finely Chopped Kale (1 bunch)
4-5 potatoes peeled and diced
Chopped Bacon (1lb.)
Sliced Polish Sausage (1 lb.)
Milk

Directions:
Boil Kale for 10 min. in large pot of water
Next, add potatoes, bacon, and sausage (boil till potatoes are done)
Drain and remove meat
Mash potatoes and kale in bowl (add milk)
